Finalist of the "Master Chef" show, Alik Mkrtchyan, shared his signature recipe for pickled cabbage "Petal" with beets, also known as Georgian-style cabbage.
This recipe results in incredibly delicious, crunchy pickled cabbage with a vibrant pink color. While some may prepare it with vinegar, "Master Chef" Alik Mkrtchyan revealed a traditional recipe for pickled cabbage that is made through natural fermentation.
To make "Petal" pickled cabbage using 3 kg of white cabbage, the "Master Chef" finalist uses:
- 0.5 kg of beets
- 1 head of garlic
- 100 g of dill or celery leaves
- 2 pieces of hot chili peppers
- 2 liters of water
- 100 g of salt
- 10 black peppercorns
- 3 bay leaves
- 10 allspice berries
Alik Mkrtchyan cuts the cabbage into large pieces. The beets are peeled and sliced into rounds.
In a jar or container, layer the pieces of cabbage and alternate with layers of beets, ensuring the cabbage is evenly dyed purple, along with dill and sliced hot peppers. Also, add bay leaves, black pepper, and allspice berries.
For the brine, "Master Chef" Alik Mkrtchyan adds salt to the water, stirs until dissolved, and brings it to a boil. Pour the brine over the cabbage.
Place a weight on top to ensure the cabbage is completely submerged in the brine, and leave it in a warm place for about three days. Then, move the pickled cabbage "Petal" to a cool place for another two days.
The result will be super delicious and crunchy pickled cabbage.
