The winner of the Ukrainian cooking show "MasterChef," Evgeny Klopotenko, shared a recipe for a delicious cheesecake with caramel.

For this dessert, it's best to choose the richest cottage cheese — this will make the cheesecake more tender and enhance the flavor.

For the base:

  • 800 g of fatty cottage cheese (9%)
  • 180-200 g of sugar
  • 4 eggs
  • 1 tbsp of flour (+ 1 tbsp of flour for dusting the mold)
  • 1 tsp of vanilla sugar
  • A pinch of salt
  • 1 lemon
  • 1 orange
  • 50 g of butter
  • 2 potatoes
  • 50 g of raisins (optional)

For the caramel sauce:

  • 150 g of sugar
  • 150 ml of cream (33%)
  • A pinch of salt

Step-by-step recipe

In a bowl, combine the cottage cheese, sugar, eggs, flour, vanilla sugar, and a pinch of salt. Then add the grated zest of the lemon and orange, along with the softened butter.

Blend the mixture with a blender, ensuring there are no lumps, as "MasterChef" Klopotenko shares. If desired, add raisins or other dried fruits. Boil the potatoes without peeling them, then let them cool, peel, and grate them finely.

Preheat the oven to 180°C. Add the grated potatoes to the cottage cheese mixture and gently mix. Prepare the mold as described and pour in the mixture, smoothing it out. Bake for 60 minutes, as "MasterChef" Klopotenko advises.

For the sauce, melt the sugar with a pinch of salt in a pan. Do not stir with a spatula, as this can ruin the caramel; simply tilt the pan from side to side — that will be enough, recommends "MasterChef" Klopotenko. Finally, add warm cream.

Whisk together to create a sweet mixture. Serve the cooled cheesecake drizzled with salted caramel.
